Almond Fingers

A very simple Middle Eastern sweet that is especially popular in Arab countries.

Ingredients:

  • 1 3/4 cups ground almonds
  • 1/2 cup ground pistachios
  • 1/4 cup granulated sugar
  • 1 tbsp rose water
  • 1/2 tsp ground cinnamon
  • 12 sheets of filo pastry, defrosted
  • 1/2 cup butter, melted
  • confectioner's sugar for dusting
Instructions:
  1. Preheat the oven to 325F. Butter a baking sheet. Mix together the almonds, pistachios, sugar, rose water and cinnamon.
  2. Cut each sheet of filo pastry into four rectangles. Work with one at a time, and cover the remaining rectangles with a damp dish towel.
  3. Brush one rectangle with melted butter, and place a teaspoon of the nut filling in the center.
  4. Fold the sides and roll into a finger shape. Continue until all the fillings has been used.
  5. Place the "fingers" on the baking sheet and bake for 30 minutes. Transfer to a wire rack to cool, then dust with confectioners' sugar.
